Healthy Hawaiian Chocolate Banana Pastry Recipe

Ingredients:

  • 6 sheets of whole wheat phyllo dough (can purchase at any health food store in the freezer isle)
  • 3 bananas
  • 1/4 chopped macadamia nuts
  • 1/4 cup carob chips
  • 1/2 teaspoon cinnamon
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon nutmeg
  • 3 tablespoons nonfat organic yogurt
  • 4 tablespoons date sugar (2 tablespoons for the sprinkle and 2 tablespoons for the chocolate sauce)
  • 1 tablespoon raw honey
  • 3 tablespoons oat bran
  • 4 tablespoons of Grape-seed oil

Directions:

Preheat Oven to 400 F.

  • Make sure that your whole wheat phyllo dough has been at room temperature for 2 hours.
  • To Make the Phyllo Dough Sprinkle:

-Take out a bowl and mix together your nutmeg, 2 tablespoons of date sugar, coconut, chopped macadamia nuts, cinnamon and  teaspoon nutmeg.

-Add the carob chips and mix together.

  • To make Your Chocolate Sauce Banana Sauce:

-In a separate bowl, mix 2 tablespoon of unsweetened cocoa powder together with the yogurt, 2 tablespoons of date sugar and 1 tablespoon of raw honey. Mix together.

-Add sliced bananas to chocolate sauce and mix so the chocolate is covering the bananas.

  • To Assemble The Phyllo Dough Layers:

A. Take a piece of phyllo dough out on and put it on parchment paper on the counter. (This will help you easily transport it to the oven after you roll it)

B. Take a brush and lightly brush the entire piece of phyllo dough with Grape Seed Oil. (Just as delicious as butter and much healthier)

C. Sprinkle the coconut/nut/carob/date sugar mixture lightly on top. (You will need to do this 5 times between your layers, so space it out accordingly.)

D. Add a second piece of phyllo dough directly on top of the first piece of phyllo dough, and press down gently. Brush on more grape seed oil and add another piece of phyllo dough.  Continue  with this process 5 times.

E. With your sixth piece of phyllo dough, you will want to do something different. Sprinkle the 3 tablespoons of wheat bran on top of the phyllo dough. (This is important to soak up moisture so the dough doesn’t get soggy)

F. Add your banana mixture in the lower third of your dough.

G. Wrap the dough up like a burrito.

H. Make small slits where you will end up cutting the phyllo dough. Do not cut all the way through. This step helps you cut it after it is baked.

I. Brush the outside with a light coat of grape seed oil.

  • Bake at 400 F for 30 Minutes.

This whole wheat phyllo dough pastry recipe is delicious when served right out of the oven. I recommend eating this tasty pastry right away, as it does not store well.

Cheers to healthy living,  healthy kids and enjoying it every step of the way!
