Preheat oven to 350 degrees

  • 3/4 cup white wheat flour (This is a form of wheat flour)
  • 1/4 cup millet flour (or white flour unbleached)
  • 3/4 cup coconut sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 large egg
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/4 cup sour cream
  • 1/4 cup yogurt
  • 1/4 cup grape seed oil
  • 2 cups of finely sliced red apples

  • 1/4 cup dark chocolate chips

Crumble Topping:

  • 1/2 cup of maple syrup sugar powder (Can use coconut sugar too)
  • 1/2 cup white flour
  • 1/2 teaspoon cinnamon
  • 4 tablespoons butter

  • Dry ingredients:

Mix the flours, salt, cinnamon and baking soda together. Add the sliced apples to the flour mixture, which helps them not to fall in the batter.

  • Wet ingredients:

In a separate bowl mix together sour cream, yogurt, apples, oil and vanilla.

  • Crumble Topping:

For the crumble, in a separate bowl mix the flour, cinnamon and sugar together. Then pour in the melted butter. Use your hands to squeeze together until it resembles soft coarse crumbs.

  • Mix Wet and Dry Together:

Mix both the wet and dry ingredients together. Add chocolate chips as an option. Take a piece of parchment paper and put inside of a baking pan so that you could lift it out when baked. (This saves clean up)

Sprinkle crumble topping mixture on top evenly.

  • Baking Directions:

Bake for 55 minutes or until golden brown. You will smell the wonderful aroma in the air when it is cooked. Remove from oven. When it isn’t hot, lift coffee cake up by the sides of the parchment paper to cool. Let cool 10 minutes before you eat it. ENJOY!
